Tasty Tuesday - Pecan Sandies

I'm BACK!!!
Its tasty Tuesday. 

Recently, my Parents celebrated 50 years of marriage. Awesome, I know!!!!
They had a grand party and it was beautiful and so much fun! And because of Covid-19, we all wore masks, except for pictures.  (In my next post, I will share some pictures.)
Someone asked me for the recipe for one of the sweet treats that were available to eat at the party. It's my moms recipe and otherwise known as Italian Wedding Cookies.
My whole life, they were only baked at Christmas and my 2nd favorite treat. 
They are called...

Pecan Sandie's
1 cup margarine (softened)
1/3 cup sugar
2 tsp water
2 tsp vanilla
2 cups flour
1 cup chopped pecans
(at least) 2 cups powdered sugar

-Cream together sugar and margarine
-Add water & vanilla - mix well
-Add flour & chopped nuts
- Mix until blended
- Chill for 4 hours
- Roll into 2" x 1" logs
- Bake 325 for 20 minutes on an ungreased cookie sheet
- Cool 5 minutes
- Roll in powdered sugar
-Place on a cooling rack
Enjoy

(You can roll into balls instead of logs)

They are kind of sweet shortbread with nuts kind of cookie. It's not Christmas until I've had one or two or ten.

They taught me what a marriage really is. 

IT IS love, and sacrifice, change and willingness to forgive. IT IS loving someone and not liking them all the time. IT IS the little things and the big things. IT IS small and grand gestures. IT IS in sickness and health. IT IS being selfless. IT IS a lot of work. IT IS figuring it all out and growing up together.  And IT IS all worth it.  
I know it wasn't all fun and happy moments, but it was a great adventure. 
And that it will continue to be one. 
I am grateful to KNOW it is forever.

It was nice to be together as a family. Shane and Jami came in from Utah. All 6 of us kids were there. 

There was a surreal kind of moment at the party, my favorite part, when we stood together with my parents. All 8 of us. We ALL looked around shocked at the, how do it describe, weirdness that we were in fact ALL there. It felt like someone was missing.

It was surreal.

With the lights from the party, my mom in her wedding dress all aglow, it was... awesome is the best word for it, but it barely describes the moment. It was perhaps a slight vision, a clip from the past of what Heaven was like when we began as a family, when we chose each other and decided to be a family. Forever.
 It got weirder for some us when the hand holding started. (Not me, okay me a little)
It was a moment I will NEVER Forget.

It was wonderful to see family, friends and neighbors that they have raised, supported, and befriended all these 50 years. My parents are good, no GREAT people. I knew not everyone could be there, this covid-19 has reeked havoc on everyone's plans since the middle of march., but the turn out was fantastic. 

It was beautifully decorated, the tasty treats were divine, the music was hand picked by my parents and handled by yours truly. There was laughter and smiles, tears of joy and tons of hugs. Yes, I said it. There were hugs. Some of these people we haven't seen in years. and Facebook doesn't count. 
It was SO. MUCH. FUN.

My sister Aimee, the awesome photographer, took tons of pictures. I took a few. I'm not as good as she is and I seriously haven't picked up my cameras in years. I will share my pictures. 
But I know it doesn't do it justice.

And my family. There isn't a better one out there.
On a daily basis, I am thankful for my parents and the family I was raised in.
 And I truly feel bad for other people, who don't have a family or parents like mine. 

    
When you first walked in, there was a beautifully decorated table with an arrangement of pictures from my parents actually wedding day.

I keep telling my Mom she should do weddings, but she says its too much work. 

Each table was decorated by my mom and I believe my sister helped with the flower arrangements.

I was having too much fun that night and didn't take pictures of the party at night with all the lights and flameless candles. It was beautiful all lit up.

Okay, My parents had 6 kids.
Jeremy, Katie, Shane, Aimee, Sarah and Carrie
In 1993 - Jeremy married Tracy- they and 3 boys- Jim, David and Ben.
(They divorced in 2006)
Then Jeremy met Amy. She had three girls. We call them the Brady Bunch. 
So together they have JimJennifer, JessicaDavid, Emily and Ben.
I (Katie) married Jeff in 1994. We had 6 kids - Matt, Nathan, Caleb, Samuel, Emma, and Michael.

Shane Jami in 1999 - They had 4 kids. IsabelBrigham, Nolan and Cannon.

(Do you see all the boys versus girls? and I'm not even done.)

Aimee married Tyler in 1995 - They had 4 Boys.
Coleman, Jacob, Carter and Logan

Sarah married Ryan in 2006.
Ryan had a son already. Gabe.
They went on to have 4 more kids. 
So total 5 for Sarah and Ryan - Gabe, Levi, Sawyer, Henry and sweet Avalie

Carrie had Mia in 2000. 
She married Brent in 2010. Brent had Mason.
Together they had MiaMason, KentonAnnabella (Bella) and then Lorelei.
Jason and his brother Tim came later. (not officially adopted, but ours all the same)

This past May 2020, Jim married Emily.
In July 2020, Jacob married Kenzie.

Total grandkids, with unofficial adoptees and wives....
33 grandkids
22 boys
11 girls
