Tasty Tuesday - Pasta Bake

This recipe I got from my sister-in-law Karin.
I have tweaked and added a few things to it.
So easy too.

Katie's Pasta Bake
1 lbs ground beef or Italian sausage
1 can/jar Spaghetti Sauce
1 can petite diced tomatoes
1 whole carrot finely diced
4 cups shredded cheese
4 cups uncooked penne pasta (bow tie works too and is fun for kids)
1/4 cup brown sugar
1/2 tsp Italian seasoning
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp onion salt
1/2 tsp pepper

Brown ground beef or sausage.
Drain grease and add spaghetti sauce, tomatoes, carrots and seasonings.
Stir until blended and add brown sugar and mix well.
Let it come to a boil and reduce to medium heat until pasta is cooked.
Cook pasta for 8 minutes and NO MORE . (The pasta will cook more in the oven)
Drain noodles.
In a large bowl, add noodles and 2 cups cheese. mix well.
Add 1 cup of sauce to the bottom of a 13x9 casserole dish.
Spread sauce on the bottom of casserole dish.
Measure 1 1/2 cups of sauce and set aside.
Add the the rest of the sauce to the pasta in the bowl.
Mix well and add to the casserole dish.
Spread remaining sauce over pasta.
Spread 2 cups of cheese over the top and cover with foil.
Bake at 350 for 25 minutes.

We had it last night for dinner.
It was quick and easy.
And Super mom here snuck in some veggies. Hee hee
It is my easy version of Lasagna.
